It doesn’t matter how tired I am. If I get a call asking if I want to come over to eat Swedish Meatballs, I am going to make it! That call came last night from my good friend Jason. He spent a year in Sweden as an exchange student and still speaks really well Swedish. He was working at the Canton EMS station last night and texted and asked if I wanted to come over as he was cooking for the trucks on duty. In the shower I went and out the door!
Usually he makes the meatballs from scratch but since it was short of time he had bought 160 (!!!) frozen meatballs. When I came he was about to cook the sauce and noodles.
This was soo delicious, and he even had Lingonberry jam! I haven’t had that for a LONG time! That is just sooo good. Jason is an awesome cook so I know when he is in the kitchen something awesome is coming out of it.
Great company from fellow EMS folks and delicious food, what else can you ask for on a Halloween night? No, I wasn’t dressed up or spooked out. I had to leave fairly early since the alarm went off at 1:45am and the time change wasn’t even noticeable…
