Food time again… I honestly don’t know why I post this, I am not a good cook to begin with, I don’t even like to cook. It is just something that has to be done in life. I often hear that my food is different from what y’all are used to so I guess I’ll continue to do it, especially the Swedish dishes that I make.
This dish I made the other day is one of the dishes my grandmother made all the time for me and it is so easy. I don’t know any other country that does this but for Texans… who loves bacon… that y’all haven’t put this on your breakfast table is to me a question… It is the most easy thing to do and it is soooo freaking good! For us it’s a lunch and dinner dish, not a breakfast thing by the way but we don’t eat bacon for breakfast either for that matter, unless on vacation or a trip.
Cook the bacon to desired crispiness…
Make a pancake mix with milk, flower, egg and salt. Add the bacon…
Put in the oven, 450 degrees, 25 minutes and tadaaaaa…
Seriously folks… y’all can call it a casserole or whatever but this is awesomeness. We usually eat it with lingonberryjam but I didn’t have that at home so I just do strawberry jam instead. It works at least. I’ll have to take a trip to Ikea soon to get my Swedish goodies again…
